Our origins trace back to the University of Helsinki where a food scientist specialized in oleogels and lipid structures met with material physicists and started exploring ways of combining these two disciplines to create something new and exciting for the food sector. In particular, the scientists were motivated by a desire to address the global health/obesity epidemic caused by unhealthy eating. As we all know, it can be hard to change our habits so the team decided to focus on the big question on how to make what we love to eat healthier!
Mix the greatest minds in food science and material physics together and combine that with commercial expertise, and Oleoflow was born – the deep-tech team behind the healthy fat!
Oleoflow is aiming to spin-out from University of Helsinki in summer 2023.

Meet the core team:
COMMERCIALJyrki Lee-Korhonen (M.Sc. Econ)
Jyrki joined the Oleoflow team in summer 2022 to lead the commercialization. Before diving into the deep end food tech, Jyrki spent +20 years in private equity in London and Stockholm working at companies such as JP Morgan, Triton, Terra Firma and CDPQ. (Linkedin) |
TECHNOLOGYDr. Fabio Valoppi (Ph.D., Food Science)
Fabio leads our deep technology development of structuring healthy oils into hard fats. His research career at the forefront of lipid and oleogel structures spans over a decade, originating from University of Udine before moving to University of Helsinki in 2017. (Linkedin) |
OPERATIONSAnton Nolvi (M.Sc., Applied Physics)
Having a background as a researcher before moving into R&D project management, and having span-out a tech-company in the past, gives Anton a solid experience to work in the interface of tech and commercial, bonding these together smoothly. Anton takes care of industrial scalability and makes sure that daily operations run without friction. (Linkedin) |
SCIENCEProf. Ari Salmi (Ph.D., Material Physics)
Ari guides the science of our material structuring. He has +15 years of experience in research and development of physics applications, focusing especially on ultrasound. Ari acts as the professor of the Electronics Research Laboratory and has been involved in multiple start-ups originating from the laboratory, for example as a co-founder of Photono Oy. (Linkedin) |
